12 Mozzarella & Pesto Halves

I was pleasantly surprised by the sourdough—using surplus bread makes it noticeably richer and heartier than typical sandwich bread. The pesto and mozzarella balance perfectly, and the rocket adds just the right peppery kick.

The sun-dried tomatoes added a nice tangy pop against the creamy mozzarella, and the basil pesto was super fresh tasting. I'm really impressed with how well the Wasteless Sourdough held its texture even after being in the fridge for a bit.

The sourdough held up perfectly, even after a few hours in my bag. The combo of fresh mozzarella and peppery rocket with that rich pesto really hit the spot for a quick lunch.
