Ham, Cheddar & Caramelised Onion Quiche

The combination of the smoky ham and the tangy Dijon mustard really cuts through the rich, creamy custard. I heated it for lunch and the crust held up perfectly without getting soggy.

The custard is rich and silky, and the caramelised onions add just the right sweetness against the sharp cheddar. I heated a slice for lunch and the pastry stayed crisp at the edges while the middle was properly set.
