Salsa Verde Chicken & Remoulade Salad

The salsa verde on the shredded chicken is just the right level of heat, and the tangy celeriac remoulade with those little cornichons and capers balances it perfectly. I ended up eating the whole container in one sitting.

The shredded chicken stays tender and the salsa verde has a nice kick without being too spicy. The haricot beans add a good bit of texture, and I liked how the apple in the remoulade kept it fresh-tasting.

The creamy celeriac remoulade has a nice tang from the cornichons and capers that cuts through the richness of the salsa verde chicken. I just wish there was a bit more of the shredded meat in the mix, but the haricot beans make it feel hearty enough for a lunch.
