4 Pistachio Lemon & Rose Cakes

I wasn’t sure about the rose-raspberry icing, but it’s a perfect balance—bright and floral without being too sweet. The pistachio sponge is incredibly tender, and those lemon-soaked layers really shine. Definitely ordering more for brunch.

The lemon syrup keeps the pistachio sponge so moist it practically melts, and the rose icing on top isn't overpowering like I feared. Six of us split them after dinner and everyone went quiet for a minute, which never happens. Just watch out for the odd bit of pistachio shell.

Ordered these for my mum's birthday tea and the pistachio sponge stayed so moist under all that lemon syrup. Rose petals on top made it look way fancier than the price suggested. Genuinely one of the best cakes I've had delivered.
