12 Mini Avocado Sandwiches

Was pleasantly surprised by how fresh the avocado salsa verde tasted, even for delivery. The chickpea filling added a nice heartiness, and the plant-based challah bun held everything together without getting soggy.

Ordered the 12 mini avocado sandwiches for a work lunch and they disappeared in ten minutes. The chickpeas give them a nice bite, and the radish keeps the whole thing from feeling heavy. The challah buns held up way better than I expected too.

The salsa verde is what makes these, tangy and a little spicy against the creamy avocado. Radish adds a nice crunch so they don't feel mushy. Ordered a platter for a work lunch and they disappeared before anything else.
