Apple & Blackcurrant Overnight Oats

The blackcurrant compote is nicely tart and cuts through the creamy oats perfectly. The toasted almonds add a satisfying crunch that makes the whole pot feel like a proper breakfast, not just a quick snack. I've already ordered another batch for next week.

I was skeptical about almond butter on oats but it totally works here — creamy without being heavy, and the toasted almonds on top add a nice crunch. The tart compote cuts through the richness perfectly, so it never feels too sweet.

The blackcurrant compote is properly tart, not that sweet jammy stuff, and it cuts through the oats really well. Toasted almonds on top still had a bit of crunch even after sitting overnight. I've been eating one on the train and it actually keeps me full until lunch.
